Fruity Pebbles Mini Cakes

Ingredients:

  • 1/2 cup gluten-free flour

  • 1 teaspoon baking powder

  • 1/4 cup granulated sugar

  • 2 medium/large eggs

  • 1/4 cup vegan butter/oil

  • 2 tablespoons oat milk

  • 1/2 teaspoon orange/lemon/vanilla extract

  • 1/4 cup fruity pebbles (plus some for topping)

Directions:

Preheat oven to 350. Mix all dry ingredients in one bowl. Mix all wet ingredients in a second bowl. Slowly whisk the dry ingredients into the wet ingredients. Spay glass mason jars with nonstick spray. Pour batter evenly across filling about 1/3 of the way full. This will make 3 small size mason jars. Bake for 20 minutes and let cool before topping.

Make it fun & add your own whipped topping (we used coconut milk whipped cream) or mix it up and top with fresh fruit. A fun, and family friendly recipe that is sure to please even your picky eaters.
