Lactation Oat Bars
I’ve only had two major things on my to do list for the upcoming postpartum period. The first, clean the entire house. That one is still a work in progress, but the second was to make freezer meals. I’ve got a good chunk of that done thanks to a sudden burst of energy this past weekend. I made a few raw crockpot meals, some casseroles and other oven ready dishes. I also made some banana bread to freeze for breakfast.
Then I had a little extra energy left over and decided to make some lactation bars. I plan on packing a few in my hospital bag to help with milk production. It can take a few days after birth before a moms mature milk comes in and a yummy treat that helps the process along is a must. I searched and searched recipes for the past few weeks, but couldn’t settle on one that had everything I wanted in it. It took some trial and error but I’ve come up with my own easy recipe that also tastes good! These are so simple and easy to make and you can substitute some of the items depending on your preference.
Ingredients:
1/4 cup chia seeds
1/4 cup ground flax
3 cups rolled oats
1 cup crushed mixed nuts (optional)
2 cups almond meal
1/4 t salt
1 t cinnamon
1/4 – 1/2 cup brewers yeast
1/4 unsweetened coconut (additional 1/4 cup of omitting nuts)
1 cup chocolate chips (additional 1/2 cup of omitting nuts)
2 t vanilla
2 eggs
1 cup melted coconut oil
Directions:
Preheat the oven to 350 degrees. Combine all dry ingredients in one mixing bowl, then in a separate bowl combine all wet ingredients. Once finished combine the two bowls and thoroughly mix. Spread mixture evenly on to a 9″ by 13″ pan. Make sure before placing in the oven the mixture is well packed down. Bake for 20 minutes or until it starts to brown around the edges.
Once you have removed the pan from the oven allow them to completely cool before cutting. These are good while they are still warm, once the have cooled and they freeze perfectly! Pop one out and enjoy.
