Strawberry Marshmallows
Ingredients
3 envelopes of Knox gelatin
1/4 cup freeze dried strawberries chopped
2 cups granulated sugar
1/2 ice cold water (for gelatin)
1/4 cup water (to boil)
1 TBS orange or lemon extract
2/3 cups light corn syrup
1/4 cup powdered sugar
2 TBS corn starch
Directions:
1) In mixing bowl sprinkle gelatin over the 1/2 cup of cold water
2) in a saucepan add water, corn syrup, extract and sugar. When the sugar has dissolved bring the mixture to a rapid boil and let it go for 1 minute.
3) Add the boiling mixture to your mixing bowl. Using the whisk attachment or hand mixer slowly work up to a high speed and mix for 13-14 minutes at a high speed.
4) Once the mixture has lightened in color add the freeze dried strawberries and mix only until combined. Pour the mixture into a greased (or lined with plastic wrap) pan and let sit for 2 hours.
5) In a small bowl combine powdered sugar and corn starch ( you can add more crushed freeze dried strawberries as well) then spread the powder mixture onto a flat cutting board and flip the marshmallows onto that. Cut and coat in the powdered mixture.
6) Eat all the marshmallows
